Actually yes it's possible to change the icon for your app on Phonegap Build by setting it on config.xml (on the same way you'd do with Cordova/Phonegap command line). Yet, you can also use the iOS version, however for building for iOS it's needed to import developer keys, that are sold by Apple for $99/year, on the same way you would do with Cordova/Phonegap command line or even if you were using Objective-C (it's not possible to build for iOS without these keys, it's not as free as other platforms). Also, you could try VisualStudio as well. I know it's possible and I've heard it's kinda easy (and it also uses Phonegap/Cordova internally), but I never used it...
