You don't have quotes in your actual string. SQLite needs quotes around each entry in the string itself.

_SQLite_Exec(-1, "Insert into partant values('" & $numero & "','" & $cheval & "','" & $chevalmus & "','" & $driver & "','" & $drivermus & "','" & $trainer & "','" & $trainermus & "');")

This should work as long as none of your values have single quotes in them. The only time that it doesn't require quotes is when the data value has been declared as an integer. This is probably the case and why it didn't error out at $numero. If it is declared as an integer, it should still work with quotes around it.
