This udf by Siao might help.

Wait, so what exactly does it do? Sorry, I'm a newbie to AutoIt, I was just expecting a short sequence of code, which detects when a particular instance has just been started.

It hooks any window event and is the best approach. An alternative route which I suspect will meet your needs is below

$flag=0
While 1
sleep(50)
if WinExists("VLC media player","") and $flag=0 then
    ToolTip("VLC window created")
    $flag=1
elseif not WinExists("VLC media player","") and $flag=1 then
    ToolTip("VLC window closed")
    $flag=0
EndIf
