How would I best monitor the changes made by a specific process?

In other words, is there a way to "watch" an installer package for all of it's modifications to the HDD (folders\files) and registry entries so that the software could be completely reinstalled/uninstalled without the original installer/uninstaller....

I know I am most likely going to have to be more clear... do you understand what I am after?

Takes a snapshot before and after an install. Just monitoring the installer process alone isn't going to do it, as that installer might start other processes which do more things. Monitoring ALL processes is more work than you want.
